Whether you're new to espresso or you've been pulling shots for decades, pre-infusion is a tool that'll help ensure every shot you pull is a great one. By gently soaking the puck of coffee grinds with water for a few seconds before applying full pressure, pre-infusion vastly reduces the effects of inconsistencies in the puck. This may seem like a small step, but you might be surprised by just how dramatic the differences can be. Most direct plumb espresso machines are capable of pre-infusion thanks to the passive pressure of the water line but some reservoir machines, like our LUCCA A53 Mini, pull it off with special mechanisms.
