Fried chicken KABABS .
Mangalore style .
These fried kababs can be served as a starter or as a side .
These kababs are prepared usually as a side for Biryani , Ghee rice , or simple daal chawal too.
Among the Mangalore - Udupi households most of the festive meals are incomplete without these in the menu. Usually instant kabab powders are used ,here is a homemade version of it .
Ingredients
1 whole chicken cut into medium pieces or 1kg chicken cut into medium pieces.
1 egg
1 lemon
2 tsps salt or as per taste
2 tsp ginger garlic paste
3 tsps red chilly powder (reduce if you want less spicy )
1/4 th tsp turmeric powder
1 tsp chaat masala powder
2 tsps garam masala powder
3 tsps vinegar
Oil to deep fry
1/4 th tsp red food colour.
4- 5 tbsps cornflour
Method
In a large bowl add egg , salt lemon juice and whisk well .
Add ginger garlic paste and all the masalas .
Add vinegar and mix well .
Marination is ready .
Add small or medium chicken pieces and coat it well .
Let it rest for 15-20 minutes.
When you want to fry add in cornflour. And mix well.
Heat oil and deep fry the chicken pieces little at a time in batches .
Do not mix or add spoon for the first 5 minutes to avoid the coating from damage.
After 5 minutes gently flip the chicken using a spoon. Fry on high flame , flipping the chicken in between and make sure it fries on all the sides.
After 5 minutes when the chicken looks crisp remove on a plate with a tissue and serve hot .
Garnish with coriander leaves .
Mangalore styles fried KABABS are ready . Mostly served with biryanis , daal or ghee rice .
