For today’s International Sandwich Sunday we’re heading to Sicily for the Pan e Panelle. Panelle is a chickpea fritter that is also served in a sesame seed roll (thus the “Pan e” part). My understanding is that its origins are in it being a substitute for fried fish for folks who couldn’t afford the fish. The fritters would be fried in the same oil as fish at least imparting some fish flavor. It’s a simple recipe but it does require a little bit of time. Thankfully, thought the power of editing, you don’t have to wait at all. Andiamo!
