Banana-Blueberry Oatmeal Bake

In celebration of World Vegan Day, here’s a wholesome and delicious plant-based breakfast or dessert for everyone to enjoy.
RECIPE:
Ingredients:
1 cup fresh or frozen blueberries
2 ripe bananas, mashed
2 cups unsweetened almond milk (or other plant milk)
1/2 cup date syrup
1 teaspoon vanilla extract
2 cups rolled oats
1 tsp baking powder
½ tsp cinnamon
¼ tsp salt
3 tbsp chia seeds
Toppings:
½ cup mixed raw nuts, chopped
½ cup blueberries
Serve with:
Dairy-free yogurt and date syrup sauce
Instructions:
1. Preheat oven to 170 C.
2. In a baking tray, mash the banana.
3. Add milk, date syrup, vanilla extract, and chia seeds and mix.
4. Add rolled oats, baking powder, cinnamon and salt.
5. Fold in the blueberries.
6. Sprinkle blueberries and chopped mixed nuts.
7. Bake for 40 minutes.
8. Serve with yogurt and date syrup mixture.
