These cookies are a traditional Middle Eastern treat that are perfect for anyone following a low-carb or ketogenic diet. They are made with a combination of almonds and sesame flour, and are sweetened with erythritol or stevia. Here's what you'll need:
Ingredients:
* 1 cup almonds flour (100 g)
* 1 cup sesame flour (100 g)
* 1/4 cup pistachios
* 4 tbsp erythritol or stevia
* 4 tbsp butter
* Pinch of salt
* Pinch of vanilla
* 1/4 tsp baking powder
* 1/4 tsp Mahlab (optional)
* 4 tbsp water
* Sesame seeds, for topping
Instructions:
1. Preheat your oven to 170°C (340°F).
2. In a medium bowl, whisk together the almonds flour, sesame flour, pistachios, erythritol or stevia, butter, salt, vanilla, baking powder, and Mahlab (if using).
3. Add the water to the mixture and mix until a dough forms.
4. Roll the dough into small balls and place them on a baking sheet. Press down on each ball with a fork to flatten it slightly.
5. Sprinkle the cookies with sesame seeds and bake for 15 minutes, or until they are golden and fragrant.
6. Allow the cookies to cool completely before serving.
