Tempoyak Fish
1 Red tail Catfish 1kg -1.2kg (optional Patin)
Turmeric Paste:-
Blend all below with food processor
* 2 pieces fresh turmeric
* 3 stalks lemongrass
* 2-3cm width galangal
* 4-5 pieces shallots
* 2-3 cloves garlic
* 1/2 cup water
Other ingredients:-
* 10 birds chill padi
* 2 bud Torch Ginger Flower (bunga kantan)
* 5-6 sticks Vietnamese Cilantro (Daun Kesum/ Laksa Leafs)
* 3-4 Tamarind Slice
* 3 tbsp Tempoyak (Fermented Durian Paste)
* 2 cups Water
Seasoning (to taste):-
* 2-3 tsp Salt
* 2-3 tsp Sugar
* 1 tsp MSG (optional)
