Vegetarian Burrito Bowls Ingredients
Homemade Fajita Seasoning
• 1.5 tsp salt
• 1/2 tsp Cumin powder
• 1 tsp onion powder
• 1/2 tsp Black pepper powder
• 1 tsp Paprika
• 1 tsp chili powder
• 1/2 tsp Cayenne Pepper
• 1 tsp Oregano
• 1 tsp Garlic Powder
Fajita Veggies
• 1-2 tsp
• 1/2 red bell pepper
• 1/2 yellow bell pepper
• 1/2 green bell pepper
• 1 onion, sliced
• 1/2 tsp finely chopped garlic
• 1/2 tsp Fajita seasoning
Season the beans
• 1 tsp oil
• 1 tsp finely chopped/minced garlic
• 1.5 cups canned Beans, drained & rinsed (Black beans or Red Kidney Beans)
• 1/2 tsp Fajita seasoning
To make Cilantro Lime Rice
• 2 cups cooked rice
• 1.5 tbsp lime juice
• 1/4 cup cilantro, chopped
• 1 tsp pepper powder
• Salt to taste
Onion- Tomato Salsa
• 1/2 cup tomatoes, chopped
• 1/4 cup onions, chopped
• 1 jalapeno pepper (Deseed and add it) Skip if you do not prefer spicy dishes.
• 1/2 tsp pepper powder
• 1 tsp lime juice
• 2 tbsp chopped cilantro
• Salt to taste
Guacamole
• 1 avocado
• 2-3 tsp salsa
Assembling the Burrito Bowl
• Cilantro lime rice
• Salsa
• Lettuce leaves
• Beans
• Guacamole
• Greek Yogurt (or Sour Cream)
• Corn
Recipe Tips
• You can add any other toppings of your choice like cheese.
• Instead of making guacamole substitute it with avocado slices.
• You can add stir-fried tofu or boiled chickpeas to it.
