The term 'Chop Suey' comes from the Cantonese '杂' meaning various or mix and '碎', meaning small pieces.
The dish was named by Chinese immigrants in the United States in the late 19th century. It’s made of quickly stir-fried vegetables, often with meat.
Everything is cut into small pieces, using whatever ingredients you have.

1 green onion
a little ginger
6 garlic cloves
1 tbsp dark soy sauce
1 tbsp oyster sauce
2 tsp Shaoxing cooking wine
salt
6 tbsp vegetable oil
