I finish this hearty salad with a bright lemon dressing. Serve this as a side with a simple protein, or add chickpeas for plant-based protein!

YOU’LL NEED:
-1 lemon, zested
-3 T freshly squeezed lemon juice
-3 T olive oil
-2 tsp Dijon mustard
-1 tsp smoked paprika
-1 tsp kosher salt
-1/4 tsp black pepper
-2 c arugula
-1 cucumber, diced
-1 pint cherry tomatoes, halved
-1/2 c feta
-1/4 c chopped fresh mint
DIRECTIONS:
1️⃣ Cook the couscous, fluff, and set aside.
2️⃣In the bottom of a large bowl, whisk together the lemon zest, lemon juice, olive oil, mustard, smoked paprika, salt, and pepper. Add the couscous and remaining ingredients. Toss, adjust seasoning, and enjoy right away or refrigerate for later.
