Ever wondered why abalone dishes are so expensive in Chinese restaurants? It is because they usually require long/tedious preparation times and really expensive ingredients(although most restaurants will use canned already braised ones).
Here's an authentic restaurant recipe if you chance upon some fresh abalones!
Ingredient list:
2 litres, Chinese Chicken Stock
300g Pork Belly
1.5kg Fresh Abalone
50g Spring Onion
30g Ginger, sliced
1/2 Daikon, sliced
75g Jinhua Ham
30g Dried Scallops
10g Dried Oysters
10g Dried Longan
30g Rock Sugar
10g Dried Sole Powder
40ml Shaoxing Wine
Arrowroot Starch to thicken
