Homemade shrimps dumplings with crystal wrapper. It's easier to make than it looks :)
INGREDIENTS
* Shrimp fillings
100 gram shrimps (peeled)
20 gram pork fat
30 gram jicama (or bamboo shoots, cabbages, onions... if you can't find jicama)
1 tsp corn starch
Salt, sugar, pepper
* Dumpling wrapper
110 gram wheat starch (available in Asian groceries)
30 gram tapioca starch
¼ tsp salt
175 ml freshly boiled water
15 ml/ 1 tbsp oil
* Note: water for the dough needs to be very very hot otherwise it'll fail. The amount of water may vary depending on the starch. If the dough is too wet, you can add more tapioca starch.
