OMG! These keto donuts are a winner in my books. I managed to get the right consistency for a light, pillowy soft and moist texture. The coconut flour did justice to these donuts, and they are so delicious as attested by my carb eating family. And the best part is that they are so easy to make with little prep time (minus the glaze of course). They are so good even without any glaze and they can be eaten cold right out of the fridge.
However, if you like dense and chewy donuts then this may not be suitable for you. The sweetness level of these donuts without the glaze are moderate so if you prefer it milder, you can reduce the sweetener. The same thing with the glaze which I found to be quite sweet so you can adjust accordingly.

INGREDIENTS FOR ORIGINAL VERSION
Coconut flour = 60 g / 1/2 cup
Baking powder = 6 g / 1 1/2 tsp
Salt = 1/2 tsp
Monk fruit = 85 g / 1/4 cup (OR any keto friendly sweetener)
Eggs = 4 large
Unsalted melted butter = 75 g / 1/3 cup
Whipping cream = 120 g / 1/2 cup
INGREDIENTS FOR CHOCOLATE VERSION
Coconut flour = 60 g / 1/2 cup
Baking powder = 6 g / 1 1/2 tsp
Salt = 1/2 tsp
Monk fruit = 120 g (OR any keto friendly sweetener)
Eggs = 4 large
Unsalted melted butter = 75 g / 1/3 cup
Whipping cream = 120 g / 1/2 cup
Unsweetened cocoa powder or dark choc powder = 30 g / 4 tbsp.
INGREDIENTS FOR CINNAMON SUGAR GLAZE
Ground cinnamon = 2 tbsp
Monk fruit = 50 g / 1/4 cup (OR any keto sweetener)
Some melted butter for brushing
(Mix together in a bowl and adjust level of sweetness according to your preference.)
INGREDIENTS FOR ICING GLAZE
Monk fruit powdered sweetener = 4 to 5 tbsp (OR any keto friendly powdered sweetener)
Whipping cream = 3 to 4 tbsp
Pinch of salt
(Mix together in a bowl until smooth and creamy. Adjust level of sweetness according to your preference.)
INGREDIENTS FOR CHOCOLATE GLAZE
Unsweetened chocolate, cocoa powder or dark chocolate powder = 100 g
Monk fruit powdered sweetener = 1 to 2 tsp (OR any keto friendly powdered sweetener)
Whipping cream or water as necessary if too thick
(Double boil until melted, smooth, creamy and thick. Adjust level of sweetness according to your preference.)
DIRECTIONS
1. Pre-heat the oven to 338F or 170C.
2. In a bowl, mix all dry ingredients until well combined.
3. Add all the wet ingredients and mix until smooth. Adjust taste accordingly.
4. Grease donut pans and spoon batter into it until 1/2 or 3/4 full to allow space for the batter to rise.
5. Bake at lowest rack for about 15 mins. These donuts cook pretty fast so do not over bake them.
6. Remove donuts from pan and leave on metal rack to cool. Then apply glaze accordingly.
7. These donuts can keep at room temperature for few days. They can also be refrigerated up to 2 weeks and frozen for months.
