1. Bitter gourds/bitter melons: 550 g/19.4 oz
2. Mustard seeds: 1 tsp
3. Cumin seeds: 1 tsp
4. Curry leaves: About 20 leaves
5. turmeric powder: 1/4 tsp
6. Mixed spices: 1/2 tsp chili powder, 1/2 tsp dhaniya powder, 1/2 tsp cumin
powder, 1/2 fenugreek powder
7. Garam masala: 1/2 tsp
8. Hing/Asafoetida powder: About a double pinch
9. Red onion: 1 medium size, chopped
10. Garlic: 5 big cloves, chopped
11. Himalayan black salt: As per your taste
12. Tamarind paste: As per your taste
13. Rice bran oil: 3 tbsp
