ad I’ve already sung the praises of the chocolatey @pots_and_co pots, but it’s about time their lemon & lime possets had their moment too. Creamy, zesty and refreshing, they’re THE ultimate low-effort, high-impact pud perfect for Christmas. No additives in sight, just simple ingredients and pure deliciousness - YUM.
🍋 Pots & Co Lemon & Lime Possets,
available in Sainsbury’s, Waitrose, ASDA and on Ocado.
For the biscotti (makes 10-12)▫️ 175g plain flour▫️ 60g coconut sugar▫️ 1/2 tsp baking powder▫️ pinch of salt▫️ 2 medium eggs + 1 for egg wash▫️ 45g coconut oil, melted and cooled▫️ 1 tsp vanilla extract▫️ 50g pistachios, roughly chopped▫️ 20g white chocolate chips
Method:
1. Preheat your oven to 160C fan.
2. In a mixing bowl, combine the flour, coconut sugar, baking powder and salt. Add the eggs, coconut oil and vanilla extract, then mix until smooth.
3. Fold in the pistachios and white chocolate chips, ensuring they’re evenly distributed.
4. Transfer the dough to a lightly floured surface and knead gently until it comes together. If sticky, dust with a little more flour.
5. Shape into a long, thin log and place on a lined baking sheet. Brush with egg wash and bake for 25-30 mins.
6. Allow the log to cool completely before slicing into biscotti fingers.
7. Lay the slices flat on the baking tray and bake for another 10-12 mins, flipping halfway for even crunch.
8. Let cool completely before serving up with the Possets.
