Date molasses is a basic Bangladeshi rural food. Since immemorial, this sweet date molasses has been made in the greater Jashore region, the southwestern part of Bangladesh, a South Asian country.
Usually, in the winter season, one side of the head of the date palm tree is cleaned, and eyes are made there. When the eyes are cut with a sharp blade, it gives out date tree juice. From the time of cutting the tree in the afternoon till the next morning, the sap of the date palm is collected in a clay pot tied to that tree.
The next morning, the juice is collected from several date palms, and the syrup is made into thick molasses by burning them together in a big oven. Solid molasses seeds are then made by rubbing the date knur in the hot liquid molasses for a long time. Solid date molasses is prepared by mixing the molasses seeds with the hot liquid molasses.
This date molasses of Bangladesh is world-famous! It even won the heart of Queen Elizabeth of England.
