Turkish Flour Halva
250 g flour, 2 cups
200 g butter, 8 tablespoons
400 g sugar, 1+⅖ cups
400 ml milk, 1+ ⅗ cups
400 ml water, 1+ ⅗ cups
1 bar white chocolate, 60 g
4 scoops of ice cream, optional
*Add butter to a wide steel pan and turn on the heat. Once the butter melts, add the flour and stir, pressing with a wooden spoon. Continue browning for about 15-20 minutes, until the flour changes color, caramelizes and smells nutty.
*In a separate pot, combine water and sugar. Bring to a boil and stir until the sugar is completely dissolved. Once it starts boiling, turn off the heat and mix in the milk.
*Gradually add the syrup to the pan while stirring to allow the syrup to be absorbed by the halva. Keep cooking on low heat and stir until the halva fully absorbs the syrup and becomes smooth.
*Remove from heat, cover with a kitchen cloth and put the lid on. Let it rest for 20 minutes.
Serve with ice cream or melted white chocolate if desired.
