Anchovies & Peanuts
- 1 cup dried anchovies
- 1 cup peanuts
- 3 tbsp light soya sauce
- 3 tbsp coconut sugar*
- 3 tbsp minced garlic
- 1 cup + 1 tbsp cooking oil
- 1 tsp sesame seeds

Heat wok with 1 cup cooking oil, add anchovies and fry till golden brown ( 3-4 minutes).
To manage the heat: cook on medium heat- low - medium / high before turning off the heat.
Drained the excess oil off the achioves and use the same wok, fry the peanut for 3-4 minutes or when it turns slightly golden.
Use a clean wok, heat up 1 tbsp cooking oil for 15 seconds. Add garlic and stir fry until golden brown. Put in sugar, turn the heat to medium low. Stir constantly until the sugar is melted and mixed well with the golden garlic.
Stir in light soya sauce, mix well. Turn the heat to low and let the sauce simmer for about 1-2 minutes. Sauce will appear thickened and glossy. Turn the heat off.
Mix both anchovies and peanuts into the sauce, sprinkle sesame seeds while stirring. Stir and fold gently to avoid crushing the anchovies.
Best served with porridge, steamed rice, chow mein or just by itself as snack (it might be good with beer).
Tips: Make sure the frying oil has reached the perfect temperature before other ingredients are introduced. Otherwise, the food will soak up the oil and become soggy.
Store in airtight container, keep refrigerated.
