Are you tired of regular spaghetti? Does dough not tickle your fancy anymore? Well, wait, don't join the rebels yet. Try zucchini! Yeah, you can make pasta out of it. It's green, it's fresh, it's healthy and it will make you feel better about yourself, because green is cool and you are even cooler! And you deserve the coolest food! The zucchini spaghetti is very quick to make and is a great source of nutrition and antioxidants. Try it. I will show you how.
Ingredients:
- Basil
- Oil
- Walnuts
- Kale
- Garlic
- Zucchini
- Cherry tomatoes
Instructions:
1. Make the pesto first. Combine oil, basil, walnuts, garlic, and kale in the blender and blend together. If you like your pesto to be chunkier add more walnuts and/or kale.
2. Prep the cherry tomatoes by cutting them in half.
3. Next, make spaghetti noodles. Carefully use the mandoline and make Julien like cuts.
4. Add pesto and salt to the zucchini noodles, and mix well.
5. Next add the cherry tomatoes and mix it all together.
6. Use some chopped walnuts for garnish.
7. Serve right away.
