Makes approximately 15 cookies. (I got 16)
INGREDIENTS:
• 1 cup peanut butter (unsweetened)
• 2 tablespoons Erythritol or your sweetener of choice
• 1 teaspoon cocoa powder
• 1 large egg
• salt to taste (I used a pinch)
DIRECTIONS:
1. Preheat oven to 300°F / 150°C.
2. Crack the egg into a medium bowl and add the peanut butter and sweetener. Whisk or mix together until well combined.
3. Add the cocoa powder and a pinch of salt. Mix thoroughly.
4. Line a baking tray with parchment/baking paper and spoon the mixture onto the tray. (I found it easier to divide the dough in half, roll it into a log and slice out even portions, so I got 16 cookies.)
5. Press the dough using the back of the spoon into a cookie shape.
6. Bake for 15 minutes until heated through and browned. (Mine didn’t brown, even after 20 minutes.)
7. The recipe says to serve warm. When they first come out they will be very hot, so do let them sit a few minutes before trying. Enjoy!
I don’t know where I originally found this recipe, as I’ve had it around for quite some time. I did find a similar recipe on KetoVale.com, but though she used the same ingredients, hers turned out quite different from these. But since the ingredients are the same, her stats should be as well:
