Ingredients:
1 glass rice flour
3/4 cup grated coconut(optional)
2 glass water
Salt to taste
1/4 cup grated coconut
Instructions:
Boil Water: In a saucepan, bring the water to a boil. Add salt to taste. Add grated coconut. Mix it well
Gradually add the rice flour to the boiling water, stirring continuously to prevent lumps. Turn off the heat and let it cool slightly.
Knead the Dough: Once the mixture is cool enough to handle, knead it into a soft, smooth dough. Use a little coconut oil to prevent sticking and to enhance the flavor.
Shape the Roti: Divide the dough into small balls. Flatten each ball with your hands or using a rolling pin, shaping it into a thin, round roti or use roti press machine. You can dust with a little rice flour to prevent sticking.
Cook the Roti: Heat a tawa or griddle over medium heat. Place the rolled-out roti on the hot tawa. Cook until both sides are lightly golden and cooked through, brushing with coconut oil or ghee as needed.
