Delicious Lemon Cake Recipe 🍋🤍
This wonderfully moist lemon cake impresses with its intense flavor and fresh lemon glaze. Perfect for anyone who loves the taste of citrus fruits! 🥰
📝 Ingredients:
• 125 g soft butter
• 140 g sugar
• 3 eggs (size M)
• 180 g all-purpose flour (type 405)
• 1 tsp baking powder
• 1 pinch of salt
• Zest of 2 organic lemons
• 60 ml freshly squeezed lemon juice
• 1 tsp vanilla extract
For the lemon glaze:
• 100 g powdered sugar
• the juice of a smal lemon
🤍 Instructions:
1. Preheat the oven to 175 °C (top/bottom heat). Grease a rectangular loaf pan (10 x 20 cm) and lightly flour it, or line it with parchment paper.
2. In a bowl, mix the sugar and lemon zest, and let it sit for 2–3 minutes.
3. Add the soft butter to the lemon-sugar mixture and beat until creamy for 3–4 minutes.
4. Add the eggs one at a time, mixing well until fluffy.
5. In a separate bowl, mix the flour, baking powder, and salt.
6. Gradually fold the flour mixture and lemon juice into the batter.
7. Finally, stir in the vanilla extract.
8. Pour the batter into the prepared loaf pan and smooth it out. Use a spoon to draw a line down the center of the batter .
9. Bake the cake in the preheated oven for 35–40 minutes. Do a toothpick test to ensure it’s baked through.
10. Let the cake cool slightly in the pan, then turn it out onto a wire rack to cool completely.
11. For the glaze, mix powdered sugar with lemon juice until smooth, then pour over the cooled cake.
