In this episode of "RECIPES FOR MY DAUGHTER", I am making one of my daughter's favourite South East Asian snacks: Steamed Purple Sweet Potato and Layered Cake Recipe, or Kuih Lapis (Malay), or Kue Lapis (Indonesian).
This traditional South East Asian snack is versatile and can be made in many different ways. In this episode, I'm making it with purple sweet potatoes, so we will have purple layers and white coloured layers.
This cake is gluten free, dairy free, oil free, and fully plant based (vegan).
The main ingredients in this steamed sweet potato cake and coconut layer cake recipe are purple sweet potatoes, rice flour, tapioca starch, and coconut milk.
