DINUGUAN (pork blood stew) is like one of the most common dishes in the Philippines. In my opinion, it is more deserving of the title "Philippines' national dish." I don't know any Pinoy who doesn't eat it. Normally with pork offal (intestines, ears), this dish has many variations depending on which Philippine province one comes from. The main ingredient, of course, is the pork blood. It gives the dish it's gravy, saucy texture. Enjoy! Benjar
INGREDIENTS
► 2 kilos of pork belly
► 800 g - 1 liter of pork blood
► 10 pcs. of green pepper
► 1 big onion
► 5 cloves of garlic
► 2 bay leaves
► about 6 Tbsp. of fish sauce
► black pepper to taste
