Makes about 13 puris
You will need:
For the dough:
1 cup plain flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons melted ghee
1/4 teaspoon lemon juice or white vinegar
Approximately 1/4 cup water plus 3 tablespoons water
Only add the syrup to the puri if your serving them immediately.
Syrup( optional)
1 cup sugar
1. 1/2 cup water
For spreading and sprinkling:
1/4 cup ghee
1/2 cup corn starch
Garnish:
coloured almonds for garnish
ground elachi
Canola oil for deep frying
Notes:
1. Make sure the syrup is thick with no strand formation.
if it is too thin, the puri will end up being soggy.
2. If you do not want to use syrup, sprinkle the puri with icing sugar and sprinkle ground cardamon on top.
This will ensure the puri stays crispy longer.
3. Only use the syrup if your serving the puri in within a day. They do not stay crispy after.
Sprinkling with icing sugar will make the puri stay crisp for over 2 weeks.
