Diving Beetles (Dytiscidae) are rich source of protein and calcium.
We source our diving beetles from trusted insect insect foragers. We process them by cleaning them in filtered water, pressure cooking and then dehydrating for several hours. When fully dehydrated we season them with salt and pack them in bags with food-grade oxygen absorbers. This keeps them fresh for over a year.
Diving beetles are cooked and ready to eat, but first you need to remove the outer wings and then eat everything except the head. Try dipping them in Thai sweet chilli sauce!
