Colombia is known for many things, exotic fruits, friendly people, beautiful nature, and of course the history with Pablo Escobar. However its food and drink culture is to die for and today I will show you how to make one of my all-time favorite refreshing drinks with just 3 ingredients plus ice! Limonada de Coco or Coconut Limeade!!
Limonada de coco (Colombian coconut limeade) ingredients:
1. Coconut milk (Arroy-D Organic canned): 1 Cup
2. Limes: 3 limes or 1/3 Cup (or to taste)
3. Sugar: 3 Tbsp (or to taste)
4. Ice: 1 1/2 Cups
Combine all the above ingredients in a blender. Adjust sugar and lime juice to taste. The final flavors should be creamy, sweet, with a hint of sour. The texture you are aiming for is slushy-like!
Yield: 2 generous glass servings
