[KETO] Mince Pies.
Before you say "but this isn't keto" purely because of the raisins - I want you to compare a 46g (NET CARB) mince pie to these yummy 4g pies. Besides which, these are only ate at Christmas time and they are a well deserved treat when eaten once a year.
This recipe is a retake on a few traditional mince pie recipes - ones from Medieval England, Tudor England and modern England.
Nowadays mince pies are made with pure sugar ingredients like sugary fruit, but back in the day, this mincemeat was actually mince meat... So let's go back to those routes for this yummy recipe.
Before you turn your nose up, they are awesome. I tested them on an unknowing grandparent and he was SHOCKED that the sweet dessert with (keto) custard that he was happily chomping down on was in fact made with lamb mince and courgettes - not apples and oranges.
I've been working on this one for a while and I'm happy with it.
Brits give this a go, I hope it fills a hole you lost at Christmas when you started keto!

FILLING INGREDIENTS:
- 300g Lamb Mince (you can use beef but it's stronger in taste)
- 50g Animal Suet (Should be animal suet (not vegetable) as it's lower in carbs, you can alternatively use COLD lard chunks)
- 1/2 tsp Clove, ground
- 1/4 tsp Allspice, ground
- 1/2 tsp Nutmeg, ground
- 1/4 tsp Pepper
- 1 standard (about 165g) Courgette/Zucchini, peeled and chopped into small chunks
- 2 tbsp Lemon Juice
- 5 tbsp Sweetener (divided in 3 tbsp & 2 tbsp)
- 2 tbsp Double/Heavy Cream
- 1 tsp Orange Peel
- 1 tsp Lemon Peel
- 30g Cranberries, chopped fine (DO NOT USE DRIED, EITHER FRESH OR FROZEN)
- 20g Flame Raisins, chopped fine (IF YOU DO NOT WANT TO USE RAISINS, add 20g more of cranberries - I use flame raisins as they are lowest carb raisins)
- 1 & 1/2 tbsp Rum (you can use 2 tsp Vanilla Extract instead if you wish)
CRUST INGREDIENTS:
- 3 cups (340g) Mozzarella, shredded
- 2 tbsp Cream Cheese
- 2 tbsp Butter
- 1 tsp of Vanilla Extract/Sugar Free Syrup (I used Vanilla by Jordan's Skinny Syrups)
- 2 Eggs
- 1/2 cup Sweetener (I used Erythritol)
- 1 & 1/2 (150g) Almond Flour
GLAZE (OPTIONAL)
- 1 tbsp Rosewater (or Vanilla Extract)
- 1 tbsp Butter, melted
- 1 tbsp Sweetener (I used powdered Erythritol)
METHOD:
FILLING FIRST:
1. In a pan, cook mince on a low heat, when there is no more pink left, drain fat from mince and place in a large bowl.
2. In a medium frying pan, on a low-medium heat, add courgette/zucchini, add 3 tbsp of sweetener, cream and lemon juice. Mix. Add lemon zest and mix. Place on a low heat, cover frying pan and cook for 10-15 minutes (until the sauce has evaporated and the courgette is soft and deep in colour).
3. Add our "apple" courgette to the lamb mince in the large bowl. Add remaining filling ingredients (suet/lard last) and mix.
Cover and place in the fridge for at least 4 hours but overnight allows the smells to really blend and make it taste amazing.
CRUST:
4. Preheat oven to 200c/400f.
5. In a large microwave safe bowl, add mozzarella, cream cheese and butter. Microwave in 30 seconds increments, stirring in between, until the mixture is smooth and fully melted.
6. Add vanilla, eggs, sweetener and almond flour. Mix well - this is usually easier to knead with your hands and a little bit of extra keto flour (I used coconut).
7. Roll the dough about 1/4 inch thick. Use a small bowl or something similar to cut the dough into small circles.
8. Place 2-3 tbsp of the filling into the middle of each circle of dough. Fold the dough over, onto itself and crimp the edges with your fingers to close the "pie".
Make sure you check all of the pies to ensure you don't have breaks, if you do, just pinch them with warm fingers and it should close them.
Cut 3 little slits into the top of each pie.
9. Place in the oven for 12-15 minutes or until the pies have gone golden.
10. Take out of the oven and apply OPTIONAL glaze, otherwise, allow to cool for 5 minutes and enjoy!
MAKE SURE YOU STORE THESE IN THE FRIDGE AS THEY HAVE MEAT IN THEM.
They should last about 5 days.
