The sun dried Pumpkin Peel strips can be stored for as long as you wish. Fry them in oil and enjoy with cooked rice and ghee. Also, tastes great as an accompaniment to rasam.
* Approx. preparation & cooking time: 10 mins
* Time needed for soaking - 2 days
* Time needed for sun drying - 2 to 3 days
* List of ingredients:
1. White pumpkin (Ash Gourd) peel - 1 large cup
2. Curd - 1 cup
3. Salt - 2 teaspoons
4. Oil to fry
* Method of preparation:
1. Thickly remove the peel from the white pumpkin (make sure the peel has a little flesh on it) and cut into long strips.
2. Take a vessel, add the pumpkin peel strips into it. Then, add 1 cup curd so that the strips are soaked in it (add more if required).
3. Next, add 2 teaspoons salt (can vary as per taste and quantity) and mix well.
4. Cover with a lid and keep it aside for 2 days, so that the peel soaks in the salt and the flavour of the curd.
5. After 2 days, nicely squeeze the peel strips to remove the curd and spread on a large plate. Sun dry for about 2 days until the strips become crispy and are dried well.
6. The sun dried strips can be stored for as long as you wish. Fry them in oil and enjoy with cooked rice and ghee. Also, tastes great as an accompaniment to rasam.
