Shketo is an old traditional recipe that originates from Bitola in the South West area of the country.
Hearty, simple, but complex in flavours, it is a great comfort food.

YOU NEED:
1 kilo (100 grams) of Lamb Shoulder
3 Carrots, peeled and sliced
1 Large Onion, chopped
1 Bunch Scallions (Green Onions), whites and greens, slice
1 Bunch of Chinese Celery (or Celery Leaves), bundled & tied
(optional - 1 Small Celery Root (Celeriac) to be tossed away after boiling)
(optional - 2 Large Parsnips, kept whole and tossed after boiling)
** The above 2 options can also be pureed using a blender and added back to the stew if you like)
Enough Water to cover the meat
2-3 Hot Chilli Peppers - optional
1 Large Bunch of Parsley, finely chopped
Salt & Pepper to taste
1 tbsp. each of vegetable oil & olive oil for browning
2 tbsp. of Olive Oil or Butter
2 tbsp. of Flour (use a Gluten free if preferred/required)
2 heaping tbsp., of Sweet Paprika
1 Egg
Juice of 1 Lemon
