Kappa means Topioca – a root vegetable cultivated generally in the western region of India. It is a staple food for the people of that region. In India, it is cultivated mainly in the Kerala Region. This root vegetable used to prepare many tasty recipe other than just cooked in water and eaten. We will see here a recipe very popular in the Kerala region wherein it is cooked with spices and then stir fried in Coconut Oil with some more spices. If you have the Topioca which is slightly older (aged), it is better to cook them in pressure cooker for 3 to 4 whistles till it become soft (not mushy) and then use for this recipe.
We need the following ingredients for this recipe:
Kappa (Tapioca) – 500 Gms
Salt – 1 tsp
Small Onion (Shallots) – 20
Dried Red Chillies – 3
Garlic Pods – 5
Coconut Oil – 2 tbsp
Mustard Seed – 1 tsp
Red Chilli (Broken) – 1
Grated Coconut – 3 tbsp
Red Chilli Powder – ½ tsp
Turmeric Powder – 1 pinch
Salt – to taste
Curry Leaves – from 1 sprig
