Aloo Gobi In Pressure Cooker | आलू गोभी की सब्जी

Aloo Gobi In Pressure Cooker | आलू गोभी की सब्जी
Ingredients:
Mustard Oil - 2 TBSP
Cumin Seeds - 1 TSP
Bay Leaf - 2 to 3
Green Chili - 2
Ginger Grated - 1/2 inch
Garlic Cloves - 5 to 6
Onion - 2 Medium
Tomato - 2 Medium
Salt - To Taste (Around 1 TSP)
Potato - 2 Medium
Cauliflower - 1 Medium
Coriander - For Garnish
Masalas:
Coriander Powder - 1/2 TSP
Cumin Powder - 1/2 TSP
Amchur Powder - 1/2 TSP
Kitchen King Masala - 1/2 TSP (You can alternatively add garam masala)
Kasoori Methi - 1/2 TSP
Kashmiri Lal Mirch - 1 TSP
Turmeric Powder - 1/4 TSP
Method:
In a pressure cooker, add mustard oil and let it heat till smoking point. Switch off the flame and let it cool a little. Once the oil cools down a little, add cumin seeds & bay leaf and stir for a few seconds. Then add green chili, ginger and garlic. Stir till the raw smell goes away and garlic starts changing colour to golden brown. Add the onions and stir till they turn golden brown. Add the tomatoes and salt. Mix well. Add alll the masalas and cook till the tomatoes are cooked very well with masalas. Add the potatoes and cauliflower florets and mix very well. Do not add any water as the water will form naturally inside the pressure cooker. Pressure cook on medium flame for 1 whistle and switch off the flame. Once the cooker releases the pressure, open the lid and let it cool down before mixing. If you mix while the curry is still hot, everything will mash together and become a paste. Alternatively, without using a ladle, you can directly from the cooker transfer it to a serving bowl. Garnish with coriander and serve hot with roti/ rice/ naan/ paratha or any other side dish of choice.
