Nungu Sarbath is a traditional Kanyakumari Summer drink made with ice apples or Nungu. It's excellent for any sort of digestive issues, especially related to heat and dehydration and soothes the stomach. It's commonly prepared by the street vendors selling Nungu by just cutting up the ice apples and adding Nannari syrup. But the drink has evolved over time to have some variations and additions. This is my own version of the drink and I've prepared two flavours of the same drink. I've used the following ingredients:
Ice apples - 5 to 6
Ice cubes - as needed
Crushed Ice - 2 tablespoons
Chilled Water - 500 ml
Lemon - 1 (juiced)
Lemon wedges & mint leaves for garnishing
Nannari syrup - 2 tablespoons
Pineapple Sugar Syrup - 2 tablespoons
Care should be taken when choosing the type of Nungu and only soft, tender ones should be consumed. The harder ones (கல் நுங்கு) can cause severe stomach ache.
