Cook Mood Food brings you the simple but very tasty Pan fried Sardines.
Preparation time: 10-15 minutes
Cooking time: 12-15 minutes on medium heat
Ingredients serve: 3 people
Skill level: Easy
Ingredients:
10 pieces sardines
Pinch of salt
1 tablespoon red chilli powder
1 teaspoon Garam Masala (please see details below in method)
½ teaspoon turmeric
100ml oil
The Method is very simple:
Clean the sardines and then add salt, turmeric and red chilli powder to the fish, and mix well. Add garam masala powder. Garam masala powder comprises of 1/2 cup of coriander seeds, 1/4 cup of jeera, 2 tablespoons of cardomam, 2 tablespoons of cloves, 6-8 cinnamon sticks (1 inch each), 4 medium sized bay leaves and 1 star anise.
Alternatively you can replace garam masala powder with coriander and cumin powder mixed in a 1:1 ratio.
Set aside the coated fish for 10 minutes.
Add 2 tablespoons oil to the pan and heat. Add coated fish and fry them for 5-6 minutes on each side. Once fish are cooked, transfer them to a warmed plate to serve.. These sardines are delicious served with rice or potato and vegetables.
