Ingredients for two servings (this recipe makes 8 waffles, so one serving is 4 waffles):
1 cup high protein cottage cheese (200g)
4 eggs
1/2 - 1 tablespoon maple syrup/honey
2 teaspoons vanilla extract
1 cup (gluten-free) oats (2.4 dl)
2 teaspoons baking powder

1. Add all the ingredients into a blender and mix until smooth
2. Spoon the batter into a preheated greased waffle iron. Cook the waffles until golden (about 3 minutes per waffle)!
3. Store in an air-tight container in the fridge
4. Reheat in the morning in the toaster, for about one minute. Serve with berries, for example!
