Try out this Mumbai style, monsoon special Vada Pav recipe. This crispy potato vadas with served in soft buttery pav buns, flavoured with red chutney is an ultimate mouthwatering snack. Vada Pav has been a wonderful dish of all time with its burst of flavours and with fried green chillies and chutney these go superb.
Servings ~ 20 vada pav
Ingredients :
• For Vada -
700 to 800 gm potatoes
1 tsp salt
3 cups water
2 tbsp Oil
1 tsp mustard seed
1 tsp cumin seed
½ tsp turmeric powder
½ tsp asafoetida {or} hing
2 tbsp crushed ginger and chilli
Some curry leaves
Salt to taste
¼ cup chopped coriander leaves
• For Vada Batter -
2 cups gram flour {or} besan
Salt to taste
½ tsp turmeric powder
1 tsp red chilli powder
Oil for frying
• For Chilli -
5 to 6 miled spicy chillies
Squeeze some lemon juice
Some Salt
• For Vada Pav Chutney -
¼ cup peanuts
¼ cup sliced dry coconut
1 tbsp sesame seed
Salt to taste
1 tbsp Kashmiri red chilli powder
¼ tsp asafoetida {or} hing
½ cup chura
