Ingredients for Izmir Köfte / Kofta
750gr. ground beef
1 big onion
4-5 slices of stale bread
2-3 cloves of garlic
1+1/2 tsp salt
1 tsp black pepper
1/2 tsp baking soda + 1 tsp lemon juice over the baking soda to activate (baking soda is optional, gives more of a chevy springy texture)
about 5-7 medium size oval potatoes
vegetable oil to fry
for the tomato sauce:
2 tbsp butter
3 tbsp tomato paste
about 3 cups water or meat stock
salt and black pepper to taste
mild green peppers
