The only thing I do differently now from when I did this video is not add the whole 1.5 lb jar of honey and stick to what the recipe says. That made the ABV 8.0 instead of around 7.5. I now use only 1 lb of Honey per 5 gallon batch. I also add the fresh ginger and cinnamon sticks in a muslin bag with 15 minutes left and continually dunk it like a tea bag, like you make tea. This is a holiday favorite. It's really close to the real thing and some people have preferred mine. Enjoy !
