Hello Soapdodgers! Here is another recipe for you!! And its the underrated, underused, and little heard of-Chicken Feet!!!! This time its brown stew chicken feet, but you can always adapt the meat to any part of chicken if you are squeamish! Hahahaaaaaaaaaa!!!!!!!
1 Bag of Chicken Feet-To be honest Soapdodgers, I am not sure of the weights of the bags that I buy from the butcher. So lets just say 1/2kg of meat at the most.
Marjoram,Thyme(**Add the herbs last when sealing the feet, but add when using other chicken parts.),Onion, Crushed Garlic,Carrot,Celery, Mustard(Dijon or English).
Dark Soy Sauce(I used the mushroom flavoured one, but you can use any you prefer.) Upto 1 teaspoon or to taste of each of these,except when using fresh herbs, it is at least 5 stalks. Especially for thyme.
**Spice mix(At least 2 teaspoons of each spice or to taste):
Sichuan Peppercorns(These make a good alternative to ),Cumin,Paprika, Pimento,Coriander, Bay leaf. Blend all of these spices in a spice grinder and if using chicken pieces, season with some of the spice mix straight away and refrigerate overnight with the onions and crushed garlic.
Method
Firstly clean the chicken feet, but I suggest, viewing the curry chicken foot
( [ Ссылка ] ). When they are clean, grind the spice mix, and put aside. Saute the carrots onions and celery in a pot for around 5 minutes, then add the meat. If they are jointed pieces of chicken,seasoning overnight helps the flavour get into the meat. Seal for a few minutes, adding the spice mix a little at a time, followed by the herbs-Adding them too early means they might burn. Be careful, Soapdodgers!
After this, boil a kettle,and add the water to the pot, and leave to simmer for around 40 minutes to 1 hour-Ignore my mistake on the video, It will probably need to cook longer. Keep checking at least for 20 minutes intervals. Consider the 40 minutes cooking time as the guideline for cooking with a pressure cooker! Ha!
When cooked check for seasoning, and reduce the gravy a little if needed. Serve hot with starch of choice, like rice, yam or green bananas and dumplings! Disfrutalo!!
