Here is a mayonnaise variation with a Japanese umami twist. Use it the same way you would use regular mayonnaise. It is also a great dipping sauce for anything deep fried. Depending on which mayonnaise you use (scratch-made, regular store-bought, or light), your finished red miso mayo may be thick. If so, thin it with a little water, lemon juice, or lime juice.
Ingredients:
2/3 cup mayo or light mayo
4 tsp. red miso
2 tsp Sriracha or Gochujang
