Fried tapioca fritters/ ubi kayu goreng can be found as a hawker snack food throughout Malaysia, Singapore & Indonesia. Other than selling fried tapioca fritters or fried cassava chunks, the hawker also has various kinds of ingredients that are battered and deep fried such as banana fritters ( pisang goreng ), tempeh, tahu goreng (fried tofu), sweet potato, bakwan (flour with chopped vegetables) and breadfruit. They are all popular snacks for an afternoon teatime.
For this recipe the tapioca is best steam with a bit of salt and sugar until half cooked and still hold its shape. They are than fried in a batter to achieve a crispiness on the outside and soft on the inside.
INGREDIENTS for the Recipe
800g peeled tapioca ( cut into rings or chunks )
Batter ingredients
100g rice flour
50g self raising flour + 1/4 tsp soda bicarbonate
30g corn flour
1/2 tsp salt
1 egg
130 ml water
Mix all batter ingredients together. Dip tapioca in batter and fried in medium hot oil until golden brown. Drain tapioca fritters in paper towels. Serve warm.
