A traditional Goan sweet rice flour balls with a dash of coconut and jaggery flavour. Its a popular tea time snack for the Goan people. This Goan dish is also called Pinagr or Pinac and is a much-loved delicacy that requires a little bit of patience as roasting the rice to just the right colour.
Ingredients we need:
Brown Rice - 2cups(400g)
Grated Coconut - 2cups(200g)
Palm Jaggery - 1&1/2 cup(190g)
pinch of salt
How to:
1. Roast the brown rice until perfectly browned and puffed.
2. Grind the roasted rice to a fine powder.
3. Coarse grind together, 2cup grated coconut & Jaggery.
4. Mix rice powder & coconut jaggery together
5. Once well-mixed form walnut-sized balls.
Ready to be served with a cup of tea, can also be stored in an airtight container for about a week.
