Let's make some seitan ! Once you learn how to make it , you'll find it's a game changer. No more buying small amounts of expensive vegan meat !
For seitan:
1 1/4 cup water
1/4 cup soy sauce
1/4 cup nutritional yeast
2 Tablespoons miso paste
2 Tablespoons olive oil (optional)
3 cups vital wheat gluten
For broth :
1 gallon water
1/2 cup soy sauce (or 1/4 cup vegan broth bouillon)
Mix all seitan ingredients except for gluten in the food processor or mixing bowl. Add the gluten flour and process/mix until you have a smooth mass. Rest for 5 minutes. Cut seitan into small chunks.
Heat your broth in a large pot until at a simmer. Add your seitan cubes to the broth and cook for 1 hr, making sure your broth stays at a simmer. For best results, let seitan rest overnight in the fridge. However it is perfectly fine to eat it as soon as it's cooked !

Notes:
*You don't need a food processor for this recipe, but it makes mixing a lot easier. If you do it by hand, it will take a bit longer to get the right consistency .
*The smaller the chunks, the faster the seitan will cook!
