Today I’m trying out Lakbay Brew’s El Jaguar coffee which was roasted on February 26. We bought a bag of 200 grams for Php 315. I degassed it for a few days before starting to brew with it. Beforehand, I tried brewing it in different ways—I tried it with my favorite V60, both hot and cold, and even tried it with a French Press. But I think I was able to get the most of it by brewing it with a Kalita 101.
My method for my Kalita 101 is easy: I measure out 15 grams of coffee, grind the coffee while heating up my water to at least 90ºC, here I’m using 91ºC, wet my paper filter, and finish with an output of 200 grams. I start with a 50 gram bloom for 30 seconds, 100 grams in the next 30 seconds, let it draw down for 30 more seconds, and finish brewing within 2 minutes 30 seconds or a flat 3 minutes.
The cup produced tastes of berries and citrus, with a velvety body, and a sweet finish. It’s not overly sweet or citrusy that you forget you’re drinking coffee, but it’s enough to make every sip interesting. Overall, it’s a good cup of coffee, especially for the price.
