Recipe:
Egg yolk-4nos
Mustard powder-2tbsp
Olive oil-500ml
Vinegar-1tsp
Seasoning-to taste
Sugar-opt
Lemon juice-1nos
*Method:
1)Do mise-en-place.
2)Separate the egg yolk from egg then place the egg yolks in a small bowl with high sides.
3)place the ingredients such as mustard powder, vinegar, sugar into the bowl with the egg yolks and whisk them well or emulsify them.
4)Slowly, pour the oil into the bowl while whisking constantly. Once the mayonnaise has started to thicken, pour the olive oil in a slow and steady.If the oil starts to build up,stop pouring the olive oil
5) If the mayonnaise starts looking too thick, add lemon juice to maintain the consistency you like.
6) If the mayonnaise looks like thick and fluffy, season it carefully with salt and black pepper.
7)store in refrigerator and served in the sandwiches, burgers, dip etc...
