Recipe By Simple Home Meals
300gm dried anchovies
1 tbs chilli powder
1 large onion (diced)
3 large tomatoes (diced)
1 tsp salt
4 tbs oil
200ml thick coconut milk
METHOD:
First wash and rinse the anchovies a few time. Then heat the pan with some oil and fry the anchovies until its crispy. Remove from pan and keep it aside to used later. In the same pan with the same oil add in the diced onions fry the onions until its soft and translucent then add in the chilli powder. Mix it all together then add in the salt then add in the tomatoes mix it well and let it cook until the tomatoes are soft and mushy. Now add in the coconut milk mix it and let it come to a boil after 2-3 minutes add in the fried anchovies stir this well if you like it gravy then turn off the heat. If you like it dry then keep stirring it until most of the liquid is dried up then turn off the heat and serve this. This dish is to be enjoyed with rice.
