This is a nice delicious take on the classic dish Coq Au Vin. We are taking some easy shortcuts, but it will not be short on flavor! Boneless chicken thighs are simmered in a rich red wine sauce, with mushrooms, onions, and topped with crispy crumbled bacon. I hope you will give this a try!!
Ingredients
4 to 6 boneless chicken thighs
8 oz quartered mushrooms
1- 1 1/2 c red wine
2 small onion diced
8 cloves chopped garlic
6 slices bacon, chopped
2 T tomato paste
2 T flour
1 1/2 c chicken stock
1 tsp oregano
3/4 tsp dried thyme
2 bay leaves
1 tsp sugar
Salt and pepper to taste
