This is my easy and delicious madeleine recipe tutorial - using a quick 30 minute rest in the freezer to produce the distinctive hump on the madeleines. You can keep these plain and simple, or have a look at my video next week where I show you how to decorate these as pandas - AKA PANDALEINES!

This recipe is from my book - 'Baking with Kim-Joy' (smarturl.it/kimjoybakes)
Here's all the ingredients you'll need:
100g (1/2 cup) caster sugar
2 medium eggs
70g melted salted butter (1/3 cup minus 1tsp), plus extra for greasing
135g (1 cup) plain flour or all purpose flour
1tsp baking powder
30ml (2tbsp) whole milk - or you can replace this with extra melted butter.
Plus whatever you want to use to flavour - e.g. zest of any citrus fruit, 1tsp vanilla bean paste, 3/4tsp culinary lavender buds (ground up first in pestle and mortar), orange blossom water, etc. You can also use fresh or frozen berries - just place one on to each mound of madeleine batter just before baking.
Bake for ten mins!
