A great way of making your sweet potato go further, and also speeding up the cooking time which is great if you are in a hurry and it’s so much quicker than baking the sweet potatoes. These cook in less than 10 minutes.
A food processor can slice up sweet potato into wafer thin slices. I was trying out the new @thermomixukandireland slicer attachment which has 2 thicknesses for slicing and 2 for grating. All on one blade which is genius.
Sweet potato and kale.
Method;
Peel 2 sweet potatoes and slice finely using a food processor or mandolin (please watch your fingers if you don’t use a processor!).
Heat some extra virgin olive oil together with some vegetable stock. I used @marigoldhealthfoods vegetable bouillon powder.
Gently move the potato around until it starts to go tender then add a a full pack of chopped Cavolo Nero or kale. The stock will reduce and in a few minutes you should have this delicious potato and veggie mix.
Add some pepper, fresh parsley or whatever you fancy. I served mine with salmon/ lemon and some fermented veggies.
