Salad Ingredients:
5 cups chopped romaine lettuce
1 cup chopped kalamata olives (or black olives)
1 cup chickpeas, drained & rinsed
1 cup halved cherry tomatoes
1 cup diced cucumber
½ cup cubed feta
½ cup diced red onion
Greek Dressing:
¼ cup olive oil
1 clove garlic, minced
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1 teaspoon oregano
¼ teaspoon dijon mustard
¼ teaspoon salt
⅛ teaspoon black pepper
1. In a small bowl or jar, stir or whisk together the dressing.
2. Add all of the salad ingredients to a large bowl & toss with the dressing as much of the dressing as you like. Optionally, sprinkle extra oregano on top!
