I have had a lot of success with my choux pastry using this method.
I had to learn that when your pastry dough is getting close to the right consistency but not quite there, you do not necessarily need to add an entire egg. You can put an egg in a bowl or measuring cup, mix it up, and add part of the egg mixture to your choux until it is the right consistency.
It is a tricky thing to get the hang of at first. And if you add too much egg, there is no way to save your choux pastry. You just have to start over. So take it slow, add a little at a time, and use this trick to help you know when it is just right!
